5-Ingredient Banana Pancakes

These are an absolute favorite for weekend mornings. They are super quick and easy to make, are made with only real food and taste amazing! My husband who grew up with the fluffy, white out of the box kind of pancakes actually likes these better! Serve them with Cherry Berry Syrup for some extra fun & flavor!

 

Ingredients

  • 5 medium to large bananas
  • 4 whole eggs
  • 4 tsp vanilla extract (not flavoring)
  • 5 pinches baking soda
  • 4 heaping tbsp almond butter
  • Almond or coconut oil (I prefer almond for this recipe)
 

Directions

  • Heat griddle, non-stick pan or cast iron pan with either coconut or almond oil on medium heat
  • Preheat oven to 170 and put an oven proof plate in the oven
  • Combine bananas, eggs, vanilla, baking soda and almond butter in a blender
  • Blend for about 30 seconds until smooth
  • Once cooking surface and oil are hot pour batter onto surface to make a pancake
  • These are WAY easier to flip if you make smaller pancakes
  • They will stick unless you use adequate oil so don't be shy
  • Cook for about 5 minutes, then flip, cook for another 5 min or until bottom is browned
  • Transfer cooked pancakes to oven and cover with a damp dish towel to keep them from drying out and cook another round
  • While your pancakes are cooking, whip up a quick batch of Easy Berry Syrup
  • Serve with real maple syrup, Easy Cherry Berry Syryp and/or Coconut Butter
  • Whip up some scrambled eggs with spinach and tomatoes for a great, balanced breakfast
