Almond Flour Cornbread (Gluten & Dairy Free)

This is a recipe my mom and I created and then tweaked and changed for years until we got this. The cornbread is a little crumbly but it is SO tasty! Pair it with Chili, Kale Lentil Soup or any other warm delicious soup. Put some honey on top and call it dessert. 

Ingredients

  • 1 1/4 cup almond flour or almond meal
  • 3/4 cup whole-grain organic corn meal
  • 5 tsp baking powder
  • 3/4 tsp salt
  • 1 1/4 cup unsweetened coconut milk
  • 4 tbs honey
  • 4 tbs melted coconut oil
  • 1 egg

Directions

  • Preheat oven to 375 F
  • Use a glob of coconut oil to grease a 9x9 square baking pan
  • Put coconut oil and honey in a pan to heat on LOW heat--DO NOT let this boil or the honey turns to caramel and you will have a very strange consistency for your cornbread
  • Mix dry ingredients (make sure you use baking powder, NOT baking soda! Baking soda will taste terrible. I did that once. Double check you have baking powder!)
  • Mix egg into oil, honey mixture and add to dry ingredients
  • Add milk
  • Wisk until there are no lumps
  • Spread batter into pan
  • Bake 25-30 minutes until lightly browned around the edges.
  • Cut and serve with coconut butter and honey or maple syrup

Alternate method

  • Put batter into cupcake tins in a muffin pan and make cornbread muffins
  • Bake 10-20 minutes until the tops are turning golden brown and a knife comes out clean from the middle.
  • Serve with coconut butter and honey or maple syrup

One cup of this flour contains about 90 almonds and provides more than 100 percent of the daily requirement for vitamin E. The fat content of almonds is over 65% monounsaturated fat, which is excellent for maintaining healthy cholesterol levels and good overall heart health. A number of scientific studies link almond consumption to reduced risk of coronary heart disease by keeping blood vessels healthy.
