Breakfast Quinoa Bowl

This has quickly become one of Adam and my favorite breakfasts. It keeps you full all the way through to lunch, is packed with protein and nutrients and is easy to make ahead for quick mornings. You can have endless variety by swapping out the nuts, fruit and by alternating honey and maple syrup. This makes 6-8 servings in under 20 minutes & keeps in the fridge for up to 12 days.

Ingredients

  • 2 cups quinoa

  • 3 cups unsweetened coconut milk

  • 2 tsp cinnamon

  • 1/2 tsp ginger

  • 1/4 tsp nutmeg

  • Salt to taste

  • Handful walnuts

  • Fresh fruit (peaches, raspberries, blueberries…)

  • Raw unfiltered honey

Directions

  • Optional (soak your quinoa overnight in water with a splash of apple cider vinegar to help it cook faster and make it more digestible)

  • Combine quinoa, coconut milk and spices in a pan and stir to combine. You may need to add additional coconut milk until quinoa is covered by 1/4 inch of liquid. Bring to a boil, then reduce to simmer and cook until all liquid is gone or about 20 minute. Do not stir once it starts to boil.

  • When quinoa is cooked, fluff it with a fork and serve right away OR put in a container in the fridge for later.

  • Serve hot. Drizzle some honey then top with nuts and fresh fruit.

  • When you need to reheat it, put a little in a pan with a splash of coconut milk or water and heat on medium heat until desired temp.
